Microgreens are the young seedlings of vegetables that are harvested after the cotyledon leaves have developed when they are one to three weeks old. Edible young greens are produced from various kinds of vegetables, herbs, or other plants. They range in size from 1 to 3 inches (2.5 to 7.6 cm), including the stem and leaves.
Although microgreens are younger than vegetables, they have higher nutritional levels. Some people believe that vegetables contain more nutrients at a younger and developing age.
